How do you fix a cracked touchscreen?

My phone screen has a crack in it.

Is there anything I can use to fill in the crack like they do with car windows? I don't know if I can buy the car window repair stuff and use it on a touchscreen without breaking the touchscreen part.

But mobile displays are not just glass, they are incredible pieces of technology and are very delicate. You can choose to get the entire piece replaced either from the OEM or go for an aftermarket piece.

But adding some sort of windshield crack diffuser to it will ruin your phone and screen.

I've seens those ads for windshield cracks getting repaired like nothing happened, I doubt they're real though. As for your problem, if you don't want to replace your screen you can simply put a screen protector on it, there are some that are very thin, see through, the crack will still be visible but it won't cut your finger and it won't shed small shards of glass anymore
