I set the default as general giveaway, but I’ll need to figure out how to remove the “none” option in the prefix list later.

It looks like it's working as intended. You can select "no prefix" but can't create the thread until you select a prefix to use.

While you are at it can you also do it for direct messages, there are no prefix to choose from but still available

Do you mean the labels for conversations?

I don't think those can be disabled - they're so members can create folders for their DMs to organise them if they want to.

Yeah, sorry I don't think I can disable those. I'll see if I can have a look into it though, just in case.
