This is a spreadsheet where I keep (well, kept) track of backlinks for a client. The sheet includes links to the donor site, contact address, price, link type (guest post or link insertion), anchor text, target URL, and status.

And Google has been reading all these through "internal checks" all along.
 
They just started to read everything in your google accounts with AI if you did not opt out of that, might be the reason they found it.
 
This could be a problem though considering all link sellers place everything they do in a Google doc for their clients, hmm.

This is only half true at best buddy. Google states quite clearly in it's privacy policy that it does collect all user data passed through your accounts on basically any of it's products and services it hosts - workspace, NotebookLM , etc. It might have created the impression it won't do anything invasive with the data, but the op's experience might suggest otherwise.

So they sent out a reminder mail the other day just for fun to remind you if you don`t want your stuff read you should opt out from their AI to not read it, don`t think so.

I'm not even entirely sure that configuring admin rules from the workspace console will stop them from scrutinising every nook and cranny of your data. There are some sound e2ee solutions such as Virtru but they cost A LOT of money.

Did you even read what I said? I'm not disagreeing with this. I'm saying they've more or less had unfettered access to user data since before the AI debacle even began and their privacy policy even admitted it.
