Why don’t they just edit it silently to fix it and move on?

Like a visual representation of what the edit was about. This avoids misrepresentation. The strike-through represent someone taking back their words, when their response (often an advice) is proven by further comments to be erroneous. The "Edit:" is used to add-on to existing posts without changing the old text.
